Next, I savored a beautifully plated River Mint And Pedro Ximenez Seared Pork Belly. The Bush honey, sea parsley polenta chip, green beans, poached apple that was a true culinary masterpiece. It was a unique combination that celebrated indigenous flavors while offering a modern twist. My chosen side was Roasted duck fat kipfler potatoes with native thyme and was a true delight.
The dessert course was equally impressive. Mark Olive’s Bush Pavlova with Native fruit coulis, roasted wattleseed cream
was perfectly balanced, not overly sweet, and the indigenous fruits added a delightful tartness.
Throughout the meal, I sipped on a Native inspired cocktail, which perfectly complemented the flavors of each course. The wine list at "Midden" was thoughtfully curated to highlight indigenous Australian winemakers, adding another layer of authenticity to the dining experience.
